Bell Beefer Sandwich Recipe | Taco Bell’s Beefy OG, But Better

A throwback to a controversial Taco Bell menu item from the 70's & 80's. Controversial because apparently it wasn't all that good - but stayed on the menu because it presumably was their attempt to compete in the fast food burger category.

Makes 3 or 4 Beefers

Ingredients

Seasoning

  • 1 tablespoon chili powder (chipotle chili powder if you want it spicier)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon sugar
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 1.5 tablespoons masa harina, corn flour - no big if you don't have, but it does add to the Taco Bell flavor

Beefer

  • Neutral oil
  • 1 pound 80/20 ground beef
  • 3/4 cup beef stock
  • 3-4 burger buns, toasted (and brioche would be great here)
  • 1/4 cup diced yellow or white onion
  • 1/3 cup shredded cheese. a combo of white cheddar, orange cheddar and Monterey Jack
  • Lettuce for serving

Directions

Seasoning

  1. Combine all ingredients in a small bowl, mix well to combine

Beefer

  1. Heat a tablespoon of oil in a large pan, and add the beef
  2. Cook, breaking it up as you go until the pink has just left - spoon out any fat
  3. Sprinkle the seasoning over the beef and stir really well, about a minute to ensure it's fully mixed in
  4. Add the broth stirring in well, bring to a small simmer and let bubble away very gently until most of the liquid is gone, about 10 minutes on low
  5. Build: toasted bottom bun, some of the Beefer, onion, cheese, lettuce and top bun
