The 'El Diablo'

Carls Jr brought back the El Diablo Burger - and we had to make. But instead of what they shamefully call poppers, we made actual poppers. Is it difficult to eatt - oh hell yes it is. Is it worth it? Oh fxxk yes it is.

Makes 3 doubles, and damn fine doubles at that

Ingredients

Poppers

  • 1/4 cup softened cream cheese
  • 1/4 cup shredded colby-jack cheese
  • 1-2 teaspoons habanero hot sauce
  • 6 jalapenos, sliced in half lengthwise, then stemmed and seeded
  • 2 eggs, beaten
  • 1 cup all purpose flour
  • 1 cup panko bread crumbs

Habanero Aioli

  • 1/4 cup mayonnaise
  • 3 tablespoons sour cream
  • 1 small habanero, finely minced
  • 2 teaspoons habanero hot sauce
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • 1/2 teaspoon sugar
  • 2 tablespoons finely chopped dill
  • Salt & pepper to taste

Burgers

  • 6 pieces bacon, cooked and not quite crispy
  • 16 ounces ground beef
  • Kosher salt & coarse ground black pepper
  • 6 slices pepperjack cheese
  • 2-3 jalapenos, sliced into coins
  • 3 buns

Directions

Poppers

  1. Preheat oven to 400
  2. Combine the cream cheese, shredded cheese, hot sauce and a pinch of salt & pepper in a small bowl - mix well
  3. Rough up the outside of the jalapenos, then fill each half with some of the cream cheese mix, then put 2 halves together
  4. Put the eggs in one bowl, flour in another and finally the panko in one
  5. Dredge the jalapenos first in the flour, then egg, then panko, then egg again and finally panko again - press it on a little to help it cling
  6. Bake 25-30 minutes or until gorgeously golden brown

Habanero Aioli

  1. Combine all ingredients in a small bowl, mix well and set aside

Burgers

  1. Shape beef into 6 - 3 ounce patties, season woth salt & pepper and cook (hopefully over flames until just done) add a slice of cheese to each when you flip
  2. Toast the buns, and build: bottom bun, some aioli, jalapeno coins, 2 patties with cheese, 2 sliced of bacon, 2 poppers, and finally more aioli on the top bun
  3. Boom
