The Fluff Screamer

In the world of regional foods, the Fluff Screamer from Tony's Lunch in PA is easily one of the weirdest ones we've ever made, and certainly one I didn't even want to try. The name is because well, there's marshmallow fluff involved (the weird part) and hot chili (the screamer part). But I'm here to tell you it really surprised me cuz it works. Don't get me wrong, it's still weird, but it's honestly good.

Makes 3 burgers

Ingredients

Screamer Chili

  • 1/2 pound hot dogs
  • 1/4 cup passata or tomato sauce
  • 2 tablespoons ketchup
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon chipotle chili powder
  • 1 teaspoon smoked paprika
  • 1 tablespoon cayenne
  • 1 tablespoon Worcestershire sauce
  • 1/4 cup beef stock
  • 1/2 teaspoon Kosher salt & 1/4 teaspoon coarse ground black pepper

Burger

  • 1 pound ground beef
  • 3 slices white American cheese
  • 1/4 yellow onion, sliced thin
  • 3 hamburger buns
  • 3 tablespoons butter
  • 3/4 cup marshmallow fluff

Directions

  1. Chop, grind or process the dogs into very fine pieces
  2. Put into a small pot and cook over medium heat a couple minutes or until just getting a bit crispy, 3-4 minutes
  3. Add remaining ingredients and let simmer on low, stirring occasionally until most of the liquid has evaporated, 5-10 minutes then set aside
  4. Shape beef into 3 patties, and cook to your desired temp, and build: bottom bun, patty, cheese, chili, onions and finally the fluff
