The Great Chicken Grilled Cheese

The Great Chicken Grilled Cheese

In honor of National Sandwich Day 2025, we've made a big boy grilled cheese with a big boy chicken schnitzel in the middle. Traditional? Oh hell no. Delicious? Oh hell yes!

Makes one, but a big one

Ingredients

  • 1 chicken breast
  • Olive oil
  • Kosher salt & coarse ground black pepper
  • 1.5 cup Chex cereal crushed, or panko bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon each smoked paprika, onion powder, garlic powder
  • 1 cup finely shredded cabbage
  • 1/4 cup thinly sliced dill pickles
  • 1/4 cup thinly sliced Fresno peppers
  • 1 tablespoon mayo
  • 2 large slices sourdough bread
  • Sliced white cheddar cheese

Directions

  1. Flatten chicken breast to about 1/3 inch if possible, oil lightly and season with salt & pepper
  2. Combine cereal or panko with the Parmesan, paprika, onion & garlic powder - mix to combine then press the chicken into it, coating both sides well
  3. Heat about 1/2 inch of oil in a large pan to medium high, gently slide in the chicken and cook until golden on each side, prob 3-4 minutes - remove and keep warm
  4. While it cooks, combine cabbage, pickles, peppers, lime juice and about a tablespoon or so of mayo (just enough to hold it together) mix and set aside
  5. Brush mayo on the outsides of the bread, and grill mayo side down on something flat, add more mayo to facing up side, and cover each with slices of cheese
  6. When the bottom is golden and the top melty, remove and build: bottom bread, chicken, slaw, top bread
