I don’t have a video for this recipe.
If I had a photo, I would most certainly use it. That is... unless the photo I have sucks. For now, you'll just have to picture a big heaping helping of
The Hellfire Burger
...in your mind.
The Hellfire Burger

The Hellfire Burger

Crispy, smash patties, melted pepper jack, smoky charred jalapeños, crispy bacon and roasted habanero-garlic mayo. But it's not stupid hot, just enough to get your attention.

‍

Makes 2 burgers

Ingredients

Burgers

  • 1 pound ground beef, preferably 80/20
  • Kosher salt and freshly ground black pepper
  • 4 slices pepper jack cheese
  • 4 slices thick-cut bacon
  • 2 jalapeños
  • 2 brioche or potato burger buns, toasted
  • Hot honey, for serving
  • Neutral oil

Roasted Habanero-Garlic Mayo

  • 1 habanero pepper
  • 4 large garlic cloves, unpeeled
  • ½ cup mayonnaise
  • 1 teaspoon lime juice
  • ½ teaspoon smoked paprika
  • Pinch of salt

Directions

  1. Heat a dry cast-iron skillet over medium-high heat, and add the habanero, 2 whole jalapeños and 4 unpeeled garlic cloves. Cook, turning occasionally, until the peppers and garlic are blistered and softened, about 6 to 10 minutes. Keep the garlic toward a cooler part of the pan so it softens without burning. Remove everything as it's ready.
  2. Let cool slightly, then peel the garlic, put in a bowl and mash. Remove the stem from the habanero, finely mince and add to the garlic along with the mayonnaise, lime juice, smoked paprika and a pinch of salt - mix well and set aside, refrigerate until needed
  3.  Cook the bacon in a large skillet until done to your liking, remove
  4. Divide the beef into 4 equal portions, and loosely form into balls without packing tightly
  5. Heat the skillet the bacon was cooked in to medium-high, add the beef balls, and smash each firmly with a heavy spatula or burger press, using parchment betweenthe meat and press if needed Season with salt and pepper
  6. Cook undisturbed 2 to 3 minutes, until the edges are deeply browned and crispy, then using a metal spatula, scrape underneath each patty to preserve the crust, then flip
  7. Immediately add a slice of pepper jack to each patty and ckook another45 to 60 seconds, until the cheese melts and the beef is cooked through.
  8. Build the burgers: bottom buns, some of the habanero mayo, two patties, the bacon and a jalapeno sliced into 2 halves with the stem and membrane removed, then the top bun with more mayo
  9. Time to eat, but don't be scared
