Three-Cheese Baked Mac

Three-Cheese Baked Mac

Ingredients

  • 1 pound elbow macaroni or shells
  • 1/2 pound bacon, cut into a medium dice
  • 1 small yellow onion, diced
  • 4 tablespoons flour
  • 4 cups whole milk
  • 1 teaspoon smoked paprika
  • 2 cups Borden Shredded Mild Cheddar
  • 2 cups Borden Shredded Mozzarella
  • 1 cup Borden Sharp White Cheddar
  • ¾ teaspoon garlic powder
  • Kosher salt & coarse ground black pepper
  • 2 cups sour cream& onion potato chips, broken up slightly

Directions

  1. Preheat oven to 375
  2. Cook pasta until just al dente, drain and set aside
  3. Heat a large pot or pan, add bacon and cook until about ¾ done, add the onion and cook until softened and bacon is crispy – remove and set aside
  4. In the same pot melt the butter, then whisk in the flour and cook 1 minute Slowly whisk in the milk(we don’t want lumps) until thick and smooth, then whisk in the paprika
  5. Start stirring in the cheeses (only 1 cup of the Mozzarella though) a handful at a time until melted
  6. Stir in the garlic powder and pasta, mixing well to coat, bring back the bacon and onion – mix well and pour into a greased 9×13 pan
  7. Bake 15 minutes, then combine the chips with remaining mozzarella, and put over the top - cook 15 minutes more
  8. Let cool slightly before serving
