Tomato Basil Soup
Serves 4 - You can bust this out in about 3 minutes. And it’s excellent cold or hot.
Ingredients
One 28 ounce can whole peeled tomatoes
1/2 yellow onion
6 large basil leaves
Kosher salt & fresh ground pepper to taste
2 tablespoons olive oil
Sour cream for serving
Directions
Put everything in the blender
Blend until smooth and a touch chunky
Top with a little sour cream and some fresh chopped basil - eat
