Velveeta Mac
So we cheat with Velveeta - is that a crime? Well if it is, it's a simple and delicious one.
Makes about 4 cups
Ingredients
8 ounces elbow mac or whatever pasta you like
2 tablespoons butter
2 tablespoons flour
1-2 tablespoons Sweet Hot Rub,
recipe here
or your fav bbq seasoning/rub
1.5 cups milk
1/2 pound Velveeta cheese, cut into cubes
1/2 cup shredded Monterey jack cheese
Directions
Cook noodles according to package directions
While they cook, melt butter in a small pot, then sprinkle with flour and whisk until fully incorporated
Start whisking in the milk, a little a time a time until beautifully smooth
Add the cheeses, a little at a time (so it doesn't clump) stirring until smooth before adding more
When beautifully smooth, add 1 tablespoon of the rub, mix in well and taste - add more if you want
Done
