Velveted Garlic Soy Beef Bowls

Velveted Garlic Soy Beef Bowls

With the simple technique of velveting, where beef is marinated with things like cornstarch to keep it tender - inexpensive beef goes from chewy to luxurious.

Serves 2

Ingredients

Beef

  • 1 pound top round, sliced thin
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • Neutral oil
  • Cooked rice
  • Sliced green onions
  • Sesame seeds

Sauce

  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar or honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon hoisin sauce (optional but great)
  • 3 cloves garlic, minced
  • 1 teaspoon cornstarch
  • 1/3 cup water

Directions

  1. Mix the beef with soy, cornstarch, and oil - mix well and let rest 20 minutes
  2. Combine sauce ingredients in a small bowl, mix really well and set aside
  3. Heat 1 tablespoon of oil over in a pan to almost smoking, add the beef and sear about 90 seconds until just done, remove
  4. Pour sauce into the pan and simmer until slightly thickened, maybe 15-20 seconds
  5. Return the beef and mix well to glaze
  6. Spoon over rice, and finish with green onions & sesame seeds
