Velveted Top Round Cheesesteaks

With the simple technique of velveting, where beef is marinated with things like cornstarch to keep it tender - inexpensive beef goes from chewy to luxurious.

Makes 2

Ingredients

  • 3/4 pound top round, sliced very thin
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • Neutral oil
  • 2 cups mixed veggies: sliced mushrooms, peppers, onions - whatever you’ve got works
  • Kosher salt and coarse ground black pepper
  • 2 hoagie/sub style rolls, buttered & toasted
  • 4 slices American cheese

Directions

  1. Toss beef with soy sauce, cornstarch, and 1 tablespoon of the oil - mix well to combine and let rest 20-30 minutes
  2. Heat another tablespoon of oil in large pan, add the veggies, season with salt & pepper and cook until nicely softened, 3-5minutes
  3. Add the garlic, and when fragrant the soy - mix all well and set aside
  4. Turn the heat to high, add more oil and then the beef to the pan, spread it out, season with salt & pepper and cook fast, about 90 seconds total
  5. Add the veggies, another splash of soy, mix well and remove
  6. Put on the toasted buns, lay cheese over the top and melt
