Blender Hollandaise

Blender Hollandaise

Makes about a cup - Hollandaise can be used for so many things and this one is simple, simple, simple.

Ingredients

  • 10 tablespoons butter
  • 3 egg yolks
  • Juice of 1/2 lemon
  • Pinch kosher salt
  • 1/8 teaspoon cayenne, or 1 -2 teaspoons of sriracha

Directions

  1. Melt butter on low heat in a small pot - don’t let it burn
  2. Into the blender put egg yolks and lemon juice
  3. Blend on medium speed about 30 seconds
  4. Once the yolks have lightened in color, turn the blender down to low and slowly drizzle in melted butter
  5. Blend until everything is mixed and thickened beautifully, then add the salt and cayenne or sriracha - blend a few more seconds
