Chicken Breasts with Goat Cheese and Pesto

Serves 4 - Sounds fancy doesn’t it? It’s really only 3 main ingredients. Now that you know you can stuff chicken breasts - go wild and use anything you like. When you cut them open, the inside runs out - yum.

Ingredients

  • 4 chicken breasts - big ones
  • 1-5 ounce goat cheese
  • 1/4 cup pesto
  • olive oil
  • Kosher salt
  • Pepper

Directions

  1. Make a wide slice in middle of each breast to form a pocket
  2. Stuff pocket with 1/4 of the cheese and pesto
  3. Use a wooden skewer to secure the opening shut
  4. Drizzle with olive oil and season with salt and pepper
  5. Grill until done
