Everything you love about a bacon cheeseburger - except in meatloaf form. Thank you @thepoof for today's viewer recipe.
Serves about 5-6
Ingredients
Meatloaf
1/2 pound bacon, diced up
1 medium onion, diced
2 pounds ground beef
2 eggs
1/2 cup panko bread crumbs
1/2 cup diced dill pickles
3 tablespoons yellow mustard
2 tablespoons mayonnaise
2 tablespoons ketchup
1 tablespoon soy sauce
1 teaspoon Kosher salt
1/2 teaspoon ground black pepper
6 slices American cheese
Sauce
1/3 cup western chili sauce, like Heinz
1/2 cup apricot jam
1 tablespoon tomato paste
Directions
Cook bacon until just not quite getting crispy, remove to a paper towel lined plate to drain – put in a large bowl
Cook onions in the same pan using a little of the bacon grease until nicely caramelized – add to the bacon
Preheat oven to 350 degrees
Put in remaining meatloaf ingredients, and mix really well to combine
Spray a loaf pan with cooking spray, and add half the meatloaf mixture, pat down so it’s even, layer cheese on top then add remaining mix – flatten out and bake 45 minutes
Combine the sauce ingredients with remaining tablespoon of mustard, and spoon over the top
