Bourbon Baked Beans

Bourbon Baked Beans

Just gonna say these might be the biggest, boldest, most flavorful baked beans you can make. I mean with bourbon, bacon, maple syrup & molasses - how could they not be? Thank you Dylan, for your crazy delicious viewer recipe submission.

Serves 6-8

Ingredients

  • 24 ounces apple wood bacon cut into thin strips
  • 1 large onion, diced (Dylan suggested a Vidalia, but any yellow onion will be fine)
  • 6 large garlic cloves, minced
  • 1/2 cup Bourbon
  • 4 - 15 ounce cans of navy beans - cannellini or Great Northern beans will substitute perfectly
  • 2/3 cup maple syrup
  • 1 cup dark molasses
  • 2 cups your favorite BBQ sauce
  • 1/2 cup BBQ seasoning/rub, here's mine
  • Salt and pepper to taste

Directions

  1. Preheat oven to 425
  2. Cook bacon in a large pot over medium heat until most of the fat has been rendered, then remove to a bowl, leaving a couple tablespoons of fat but save a little
  3. Put in the onions and cook until softened, about 5 minutes
  4. If the pan is dry, put in a little more bacon grease or oil, then add the garlic - once fragrant, stir into the onions 
  5. Add the bourbon, stirring in well and scraping along the bottom to get up any stuck to the bottom
  6. Add back the bacon and the beans, syrup, molasses, BBQ sauce and seasoning - mix really well to combine
  7. Put in the oven and cook, stirring occasionally until thickened, rich and amazing - I cooked them about 45 minutes covered, then about another 45 uncovered
