Chicken Shawarma

This is a tremendous combination of simple ingredients that result in big flavors - and we all love love LOVE this! In fact it's one of Mrs Cooking Guy's most requested dinners. No grill? No problem cuz you use the broiler, air fryer or even a pan on the stove. Just effing make it.

Serve 4-6

Ingredients

Chicken

  • 2 pounds boneless, skinless chicken thighs
  • 1/2 cup plain yogurt
  • 5 cloves garlic, minced
  • 1 tablespoon coriander powder
  • 1 tablespoon cumin
  • 1 tablespoon smoked paprika
  • 1 teaspoon red pepper flakes
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • Naan for serving

Garlic White Sauce

  • 1 cup yogurt
  • 3 large cloves garlic, minced
  • 1 teaspoon cumin
  • Juice of 1/2 lime
  • 1 tablespoon finely chopped parsley
  • 1 tablespoon white vinegar
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 2-3 tablespoons milk

Directions

Chicken

  1. Cut chicken into even pieces, 3/4 to 1 inch are perfect
  2. Put into a bowl with remaining ingredients, mix well, cover and refrigerate 2 hours up to overnight (and of course longer is better if you have the time)
  3. if using wooden skewers, soak them at least an hour in water first
  4. When ready to cook, heat grill to medium high
  5. Put the chicken onto the skewers, oil the grill and cook away - turning often until between 175 & 180 degrees, then remove and serve with the white sauce

Garlic White Sauce

  1. Put all ingredients except milk in a bowl and mix well to combine
  2. Stir in as much milk as needed to make it as thick or thin as you like
