Egg Bites

Sent in by @itzzzbeamo for viewer recipe month, these quick little gems are an easy way to feed a bunch of people. And whether you call them egg cups, egg muffins, shirred eggs or whatever, just make em - and feel free to customize anyway you'd like.

Makes 12

Ingredients

  • 12 slices bologna
  • 2 slices American cheese
  • 12 eggs
  • Approximately 1/2 - 3/4 cup shredded cheese, the type is up to you sport
  • 1/4 cup half n half
  • Kosher salt & coarse ground black pepper
  • Smoked paprika

Directions

  1. Preheat oven to 350
  2. Heat a non stick pan, flattop or griddle pan and cook bologna slices 60-90 seconds a side until nicely charred
  3. Spray a 12 cup muffin pan with non-stick spray, and push one slice of bologna into each cup
  4. Cut each American slice into 6, and put one piece into the bottom of each cup
  5. Crack an egg into a small bowl (to make sure the yolk doesn't break if that's important to you) then gently pour into one of the cups, repeat with all the eggs
  6. Season with salt & pepper, then drizzle with about teaspoon of half n half
  7. Top each with some of the shredded cheese, then add a final sprinkling of the paprika
  8. Bake approximately 15 minutes or just until the white is set, but the yolk still runny - assuming that's your thing.
