Grilled Rum Peaches
These are pretty light (despite a little butter)and go really well with vanilla ice cream.
Ingredients
Large peaches - 1/2 serves 1 person
1/4 cup butter
Juice from 1 orange
1/4 cup dark rum
Directions
Mix butter, rum and orange juice in small pot and melt over low heat.
Cut peaches evenly in half.
Then make slices in each half about 1/2 inch apart - but leave slices attached at the top.
Grill over medium heat, basting often with butter mixture - grill marks are a good thing.
Serve beside ice cream
