Oven Roasted Sprouts with Garlic & Bacon

Oven Roasted Sprouts with Garlic & Bacon

Ingredients

  • 1 pound brussels sprouts
  • 1/4 cup extra virgin olive oil,
  • 8 cloves garlic, peeled and gently smashed
  • Salt and pepper to taste
  • 1/3-pound bacon - chopped, cooked & crispy
  • 1 tablespoon balsamic vinegar
  • Fresh parmesan for serving

Directions

  1. Preheat the oven to 425
  2. Trim bottom of sprouts, slice in half, put in a large bowl, drizzle with olive oil, season with salt & pepper - toss then spread out on a parchment lined baking sheet
  3. Scatter around garlic and roast 20 to 30 minutes until tender and golden brown at the edges
  4. Put back in bowl, add the bacon, give a light drizzle of balsamic and toss to mix
  5. Serve with freshly grated parmesan
