Peruvian Chicken

Ingredients

  • 5 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon fresh ground black pepper
  • 2 teaspoons salt
  • 3 tablespoons soy sauce or soy paste (if you can find it)
  • 3 tablespoons oil
  • 3 tablespoons white vinegar
  • 3 tablespoons mayo
  • 1 whole chicken

Directions

  1. Remove chicken from fridge about 30 minutes before cooking
  2. Combine all ingredients (except chicken) and mix well
  3. Rub most of the paste all over the chicken (keep back a little for basting while cooking) and cook…any way you want until about 165 degrees in the breast
  4. Simply grill the chicken in pieces
  5. On a smoker at about 250 degrees - and spatchcocked would make it even better
  6. Bake it at 350
  7. The just eat the hell out of it
