Sardine Sando

This is about as simple as it gets...and takes me back to my childhood. I know sardines aren't for everyone, but they should be.

Makes one sandwich

Ingredients

  • 1 teaspoon oil
  • 1 handful baby arugula
  • 2 pieces bread, something good
  • Butter
  • Mayo
  • 1 can sardines in oil - that's important
  • Lemon wedge
  • Coarse ground black pepper

Directions

  1. Heat the oil in a small pan, and add the arugula - and over the next couple minutes stir occasionally until it wilts, set aside
  2. Toast bread, butter one piece and add mayo to the other - then put the arugula on one side
  3. Top the arugula with the sardines - as many as you'd like
  4. Add a squeeze of the lemon to the sardines, season with pepper then close up shop
  5. Eat
