The Best Side Dishes for a BBQ

Ingredients

    No Mayo Potato Salad
  • 1.5 pounds baby or pee wee or small potatoes - I used purple, red & yellow, but one color is all good
  • 3 celery stalks, diced
  • 1/4 cup chopped curly parsley
  • 2 tablespoons fresh dill, finely chopped
  • 10 ounces bacon, cooked and chopped
  • 3 tablespoons honey
  • 3 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • 6 hard boiled eggs, diced up medium
  • Kosher salt and fresh ground pepper
    Baked Beans
  • Makes 6-8 servings
  • 1/2 small onion, diced small
  • 1/2 green pepper, diced small
  • 1 - 28 ounce can baked beans
  • 1/4 cup chili sauce (like Heinz, not the spicy version)
  • 1 tablespoon yellow mustard
  • 1/2 tablespoon Worcestershire
  • 2 tablespoons maple syrup
  • 2 tablespoons brown sugar
  • 1 tablespoons chipotle peppers, minced
  • 1/3 pound bacon, cooked halfway (not crispy)
  • Big pinch Kosher salt
  • Chopped green onions, for garnish
    Maple Bacon Cornbread (with sriracha honey butter)
  • Makes 8-10 servings
  • 1.5 cups cornmeal
  • 1/2 cup all purpose flour
  • 2 tablespoons sugar
  • 1.5 teaspoons baking powder
  • 1 teaspoon salt
  • 1.5 cups milk
  • 2 eggs, beaten
  • 1/3 cup maple or pancake syrup
  • 3/4 stick butter, melted
  • 3/4 pound bacon, diced, and cooked until just crispy

    Sriracha Honey Butter
  • Makes about a cup
  • 1 stick (8 tablespoons) softened butter
  • 3 tablespoons honey
  • 2-3 tablespoons sriracha
  • 2 cloves minced garlic
  • Pinch kosher salt

Directions

    No Mayo Potato Salad
  1. Cook potatoes in boiling water until soft enough for a fork to pierce easily
  2. Drain, run cool water over them, and when cool enough to handle Halve the smaller ones and 1/4 the larger ones - put in a large bowl
  3. Add celery, parsley, dill and and bacon
  4. Combine honey, mustard, garlic, lemon juice, salt & pepper to taste - mix well and add about half to salad stir through to combine
  5. Then add the eggs, and gently mix them in gently, add more of the dressing if you like
  6. Serve
    Baked Beans
  1. Preheat oven to 350
  2. In a large oven proof pot (that has a lid) cook onion, green pepper and bacon until beginning to soften and brown
  3. Add remaining ingredients, stir well, cover and bake about 45 minutes to an hour or until bubbly
  4. Garnish with green onions
  5. Serve hot
    Maple Bacon Cornbread (with sriracha honey butter)
  1. Preheat oven to 425
  2. In a medium bowl combine cornmeal, flour, sugar, baking powder & salt - mix well
  3. In a separate bowl, combine milk, eggs & syrup - mix well
  4. Add wet to dry ingredients, mix well - then stir in butter and bacon
  5. Pour into a greased 8 or 9 inch round or square pan - cast iron is ideal and place into oven
  6. Bake approximately 25 or until a toothpick come out clean
  7. Let cool just a bit, then slice and serve with the Honey Sriracha Butter below
    Sriracha Honey Butter
  1. Put everything in a small bowl and mix well to combine
  2. You can serve it like this, or put onto plastic wrap, roll into a log and refrigerate
    Carnitas Deviled Eggs
  1. Slice the eggs lengthwise down the middle (but then you knew that, right?).
  2. Put the whites on your serving plate and the yolks in a bowl.
  3. To the yolks, add the mayo, red onion, 3 tablespoons of the green onion, and the hot sauce, mustard, and salt and pepper to taste.
  4. Mix well to combine and then fill each of the egg halves with some of the mixture (you’ll have some left over, and that’s cool).
  5. Top each with some of the pork, and finally top with remaining green onion.
