Brown Butter BBQ Chicken Tacos

Brown Butter BBQ Chicken Tacos

Juicy grilled chicken thighs glazed with a BBQ sauce that’s been elevated by nutty brown butter. And as if that wasn't enough, the charred tomato & peach salsa might make you hate all other salsas forever.

Makes 10 tacos

Ingredients

  • 2 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon coarse ground black pepper
  • 2 pounds boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 4 tablespoons butter
  • 1 cup BBQ sauce (whatever your fav is)
  • Corn or flour tortillas
  • Sour cream
  • Charred Tomato & Peach Salsa

Directions

  1. In a small bowl combine the salt, pepper, paprika & garlic powder - mix well
  2. Lightly oil the thighs, and sprinkle generously with the seaoning - let sit at room temp for 20-30 minutes, or put in the fridge for a few hours
  3. In a small saucepan, melt the butter over medium heat, and keep it swirling until it foams and turns golden brown with a nutty smell (3–4 minutes), immediately remove from the heat and stir in the BBQ sauce - mix well
  4. Preheat grill to to medium high, coat lightly with cooking spray, and cook thighs 4–5 minutes per side, basting with the BBQ sauce during the last few minutes on each side until sticky and slightly charred - remove and cut up when ready to serve
  5. Heat tortillas on the grill, then top wioth some sour cream, a little extra of the BBQ sauce, some chicken and finally a glorious spoonful or 3 of the charred salsa
