Choripán Burrito - Argentina

Argentina's legendary grilled sausage sandwichgets wrapped into a burrito with provolone, chimichurri and pickled red onions.

Makes one

Ingredients

  • 1 large flour tortilla
  • Olive oil
  • 3 Argentinian chorizo sausages, or Italian if you can't find
  • 1/2 cup shredded provolone
  • 1/3 cup chimichurri
  • 1/3 cup pickled red onions
  • Handful of arugula

Directions

  1. Heat a non-stick pan over medium high, and add a little oil
  2. Split the sausage casings lengthwise, then crumble into the pan - cook until beginning to brown and cooked through, about 145 -150 degrees
  3. Kill the heat, then scatter the cheese over the top, cover and let melt
  4. Warm the tortilla, and spread a little chimichurri down the center, then add the sausage, with cheese, pickled onions and arugula
  5. Top with more of chimichurri
  6. Roll tightly, then toast in a dry skillet until golden and the cheese has melted
  7. Slice in half and drizzle with a little more chimichurri, just because
