Ghost Pepper Burger

We wanted something scary for halloween, and we got it. A gorgeous, a grilled cheese burger on a frighteningly beautiful black bun, with a hot sauce made from ghost peppers - the 3rd hottest pepper in the world. Will you dare try this?

Makes 4

Ingredients

Ghost Pepper Hot Sauce

Makes about 1½ cups

  • Neutral oil
  • 1 carrot, peeled and chopped
  • 4 cloves garlic
  • 1 small onion, chopped
  • 6-8 ghost peppers - see note below
  • 1/4 cup apple cider vinegar
  • 1 cup water
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • Juice of 1lime
  • 1 teaspoon smoked paprika

Burger

  • 1 pound ground beef
  • Kosher salt & coarse ground black pepper
  • 8 slices cooked bacon, not to crispy
  • 4 slices American cheese
  • 4 slices ripe tomato
  • Leafy green lettuce
  • Black Hamburger Buns, recipe here
  • Mayo

Note - The ghost pepper is crazy hot, but hugely flavorful. I used 7 peppers in this recipe and daaaaamn it was very hot. But it's not like you're drinking it alone, and by the time it was in the burger it was still hot, though doable and delicious. So maybe start with 3 - you can always add.

Directions

Ghost Pepper Hot Sauce

  1. In a small pot, add a drizzle of oil, then cook the carrot, onion, and garlic for 4–5 minutes until softened
  2. Using gloves, remove the stems from the peppers, and rough chop -then add them to the carrot & onion and cook another monnite or 2
  3. Add the vinegar, water, salt, sugar, lime juice & paprika - bring to a simmer and cook 10 minutes until softened
  4. Transfer to a blender with the lime juice & paprika, and blend until completely smooth- you can strain it for a smoother texture
  5. Pour into sterilized bottles or jars and refrigerate - it’ll keep 2 months

Burger

  1. Form beef into four 4 ounce patties
  2. Season patties, and grill 2-3 minutes, then flip and add cheese
  3. Cook another minute or 2, then remove
  4. Toast buns and build: bottom bun, mayo, patty with cheese, tomato, lettuce, ghost pepper sauce, top bun
