North Shore 3 Way

North Shore 3 Way

Just know when you make this, if you make it wrong, they'll come at you. And by they, I mean all of the die-hard 3 way fans in Mass.

Ingredients

  • One 4-5 pound eye of round roast
  • Beef tallow, or neutral oil
  • Kosher salt & coarse ground black pepper
  • Garlic powder
  • James River BBQ Sauce - if you can find it, in not use your fav
  • White American cheese
  • Mayo
  • Onion Burger Buns, recipe here or buy them

Directions

  1. Preheat oven to 275
  2. Trim excess fat from roast, and tie evenly with kitchen twine every couple inches to keep it round
  3. Rub with tallow or oil, and season well with salt, pepper & garlic powder
  4. Put on a rack on a baking sheet, and cook to an internal temp of 123-125 then remove, let cool
  5. Wrap tightly with cling film and then foil and refrigerate overnight
  6. When ready to make, slice a big pile super and build: bottom bun, cheese, slightly warmed pile of roast, bbq sauce, top bun with mayo
  7. Boom
