Sardine Sandwich

The caper aioli and roasted peppers make this a dream sandwich, and sardine fan lovers will lose their sxxt. But if you want a slightly simpler version, you can try this one.

Makes 2 sandwiches

Ingredients

  • One red & yellow pepper
  • Neutral oil
  • 2 tablespoons softened butter
  • 1/2 teaspoon smoked paprika
  • 4 slices bread, and make them interesting
  • Small handful arugula
  • Canned sardines, if you can find ones from Portugal, do it!

Caper Aioli

  • 1/2 cup mayonnaise
  • 1 tablespoon capers, chopped fine
  • 2 tablespoons chopped parsley
  • 1 tablespoon fresh lemon juice
  • 1 garlic clove, minced
  • 1 tablespoon extra-virgin olive oil
  • 1 small shallot, finely chopped (about a tablespoon)
  • Kosher salt
  • Coarse ground black pepper

Directions

  1. Lightly oil the peppers, then put on a hot grill to blacken, or on a lit stove or even in the oven with the broiler on - in any case the goal is to blacken them all around, then put in a paper bag and close up, or in a bowl with a lid to steam. After about 10 minutes, gently remove the black outside, remove seeds and stem - set aside.
  2. Combine butter with paprika, mix well and set aside
  3. Make the aioli - combine all ingredients in a small bowl and mix well to combine, set aside
  4. You can either toast the bread, then spread with the paprika butter, or better yet brush on the bread and cook butter side down on a flattop, then flip and toast up the other side
  5. Build the sandwich: toast, caper aioli, slices of the roasted peppers, arugula, the sardines and finally the top bread
